The three years Justin spent at The Plimoth contributed to his love for creating a new weekly menu that corresponds with what was available at the farmer’s market. The Plimoth is where Justin worked with side by side with Executive Chef Charles MacDonald, and also where he was reunited with Chef Peter Ryan, his former Chef Director at Cook Street. He began at the Hyatt Regency and worked his way up to positions as Sous Chef in three different establishments: Charcoal Restaurant, The Plimoth and most recently, internationally revered Frasca Food and Wine in Boulder. Chef Patrick does an amazing job with local and imported ingredients. Since you reserve your table, there is no rush rush feeling to leave at the end of the meal. The atmosphere and live music out on the patio made it a great evening. Coming from DFW we are used to great restaurants and this is on par with some of the best.
